Does Honey Spoil?

No. Pure, properly sealed honey does not spoil and can last indefinitely, even over centuries. Archaelogists have found edible 3.000 year old honey in ancient Egyptian tombs.

Extremely low moisture

Honey naturally has extremely low moisture, lower than the required moisture levels for microorganisms like bacteria to survive and reproduce.

High acidity

The high acidity creates a hostile environment for spoilage organisms.

Hydrogen Peroxide

Bees add an enzyme during ripening process which breaks down into hydrogen peroxide, inhibiting microbial growth.

How to Decrystallize

If your honey turns cloudy, thick, or grainy, it has not gone bad. Crystallization is a natural process where the honey changes state forming crystals. This happens to all raw honey that has not been heat treated and does not affect the quality of the honey.

To decrystallize, place open jar in warm sun or in a warm water bath. Avoid boiling or microwave which degrades enzymes and flavor.

What is Creamed Honey?

Creamed honey also known as whipped honey, spun honey, or soft-set honey is 100% pure natural honey that has undergone a controlled crystallization process to give it a smooth, velvety, and spreadable texture. Despite what the name implies, it contains absolutely no dairy, cream, or butter. It is simply honey in a different physical form that stays thick and smooth.

When Can Honey Go Bad?

Added moisture.

If left unsealed in high humidity or measured with wet utensils, excess water can allow yeasts to ferment the honey, leading to a sour smell or bubbles.

Adulterated or diluted honey.

Commercial syrups blended into impure honey can reduce its shelf life and preservation qualities.
